Spring and
summer can offer us wonderful season products!
We only
cook fresh and local ingredients which means that availability depends on the
weather conditions.
As regards
“wild asparagus” there are no problems of availability in the months of April and May; but the “King
of Mushrooms”, the Boletus Edulis, so called Porcino in Italian, needs special weather conditions – heat and
moist – and grows during the whole summer.
June, July
and August are the months of the summer black truffles.
We have
some reliable gatherers who search for us any kind of products of the woods:
wild asparagus, several kinds of mushrooms, wild berries and above all black
and white truffles.
We use to
cook them with tagliatelle, ravioli and beef meet.
If you are
lucky you will be able to eat row porcini mushrooms flavoured just with
extra-virgin olive oil, salt and pepper.
In summer
the vegetables, partly from the veggie garden, are more tastefull and juicy!!
